What is the difference between an oven electronic thermostat and a mechanical thermostat?

The electronic thermostat is controlled by changing the resistance value of the thermal element after it is heated, changing the circuit parameters.
Mechanical temperature control is controlled by bimetal and made according to the different heat conduction speeds of the two metals.
